4/6 menu plan

Monday: 
meal prep monday 


Tuesday: 
taco-ish tuesday
didn't feel well - changed menu plan to frozen chicken nuggets
moved other night's menus around (see below)
    • food prep:
      • assemble yogurt parfaits for the week, if needed
      • assemble snack boxes for the week (see my favorite containers here), if needed
        • this week: tbd
        • trying to prep 3-4 snack boxes ahead of time to keep in the fridge, as Pregnant Haley gets ravenously hungry these days with no warning whatsoever
      • visit my Pinterest boards to see where I save all bistro box and yogurt parfait inspiration and ideas
      • trying to post more of this on my Instagram feed + stories, if you need more ideas

Wednesday:
waffle wednesday
king ranch casserole (double, freeze) (originally tuesday's dinner)
(note: apparently I don't read directions bc I only put cheese on top as last step -- also I used up a bunch of frozen diced bell peppers in this recipe)
make a pan in this container, freeze the rest in these containers
  • big bowl of mashed avocado (+ pepitas + cotija, if available)

    Thursday:
    whatever tf you want (leftover night)
    • shop my favorite leftover containers here

    pancakes or waffles (originally wednesday's dinner)
    + scrambled eggs? bacon? fruit? smoothies?


    Friday:
    snack dinner

    Saturday:
    slow cooker or something quick
    favorite risotto + roasted green beans (explained in this post)


      Sunday:
      brett grills chicken
      slow cooker pinto beans and jalapeno sausage (omit sausage if not available)
            • food prep:
              • prep produce for week
              • make smoothie cups, if needed
