Monday:
meal prep monday
- use grilled chicken
- use refrigerated caesar dressing (near the produce) - its SO MUCH BETTER
- we use halved cherry tomatoes, romaine lettuce, and shredded (not powdered!) parmesan cheese with good flour tortillas
- brett crumbles croutons (either caesar croutons, or cheese/garlic croutons) to sprinkle on top - this part is essential to add crunch to every bite
- brett adds thinly sliced red onion to his
- with roasted potatoes (explained in this post) or roasted sweet potato cubes (I cook them much longer - until caramelized) or fruit

Saturday:
slow cooker or something quick
sausage and cheese tortellini pasta
slow cooker or something quick
sausage and cheese tortellini pasta
- I like to halve the amount of sausage - and I like to slice the sausage, then quarter each slice, so it's smaller pieces (we like a higher ratio of sauce and tortellini to sausage)
- ALSO. We like to double the sauce + tortellini. BUT YOU DO YOU, BOO.
- And then at the end, I add a littleeee more cream/milk so that it's a bit saucier. And then I season to taste. This is not a health blog.
- freeze leftovers in containers like this or this?
- see my list of other things I plan to freeze for postpartum
Sunday:
breakfast: make blueberry muffins (freeze leftovers)
- I bought a bigggg pack of pink cupcake liners, but usually I use my stash of 500 white liners from Amazon
lunch: club sandwiches or BLTs
roasted sweet potato cubes (I cook them much longer - until caramelized)
dinner:
- skillet creamy mac and cheese (add leftover pulled pork to brett's)
- I omit the hot sauce and cornstarch bc I'm lazy
- (mainly I omit cornstarch because I use preshredded cheese, and that's already dusted with cornstarch)
- recipe calls for cheddar + MJ, but if I have a different kind of cheese that needs to be use up, I'll throw it in and see how it goes
- I add additional salt to taste - I do not add pepper
- to reheat, add in a littleeeee liquid (I'll do milk or water) to desired consistency - otherwise it's thickkkk and you'll feel like you're choking it down. you're welcome.
- canned green beans from pantry or orange slices (+ corn casserole from mom)
