blackened salmon caesar salad (see this post for photos + how I store leftovers)
- I pile romaine, croutons (homemade or not), blackened salmon (I follow these instructions, but use premade blackening season from the seasoning section), refrigerated caesar dressing, and veggie pasta into a bowl
- sometimes I'll add shredded parm (not the powdered stuff FOR THE LOVE!!!!)
- brett can use leftover grilled chicken if he prefers
roasted sweet potato cubes (I cook them much longer - until caramelized)
OR use leftover grilled chicken or blackened salmon
- I'll use refrigerated balsamic and I'll add in grilled chicken/salmon
- meal prep:
- shop my favorite meal prep goodies here
- assemble yogurt parfaits for the week, if needed
- (yogurt + hempseeds + chia seeds + fruit...then add granola just before eating)

- sometimes I add in cotija and pepitas, as shown here
- I use my favorite avocado tool when dealing with avocados
- brett cooks his quesadillas in the cast iron, but I love my quesadilla maker
- freeze leftover grilled meat by end of the week

- I use an oatmeal pancake recipe - I use my mom's recipe so I don't link it, but there are tons if you do a quick google search
