5/4 menu plan

Monday:
meal prep monday
blackened salmon caesar salad (see this post for photos + how I store leftovers)
  • I pile romaine, croutons (homemade or not), blackened salmon (I follow these instructions, but use premade blackening season from the seasoning section), refrigerated caesar dressing, and veggie pasta into a bowl
  • sometimes I'll add shredded parm (not the powdered stuff FOR THE LOVE!!!!)
  • brett can use leftover grilled chicken if he prefers
roasted sweet potato cubes (I cook them much longer - until caramelized) 

OR use leftover grilled chicken or blackened salmon  

  • I'll use refrigerated balsamic and I'll add in grilled chicken/salmon



Tuesday: 
taco-ish tuesday
brett grills fajita meat
(fajitas? quesadillas? burrito bowls? dip meat in queso and mashed avocado? anything goes.)
  • big bowl of mashed avocado
  • brett cooks his quesadillas in the cast iron, but I love my quesadilla maker
  • freeze leftover grilled meat by end of the week

Wednesday:
waffle wednesday
pancakes or waffles
+ scrambled eggs? bacon? fruit? smoothies?
  • freeze extra pancakes/waffles or make pancake muffins with any extra batter in this mini muffin pan
    • I use an oatmeal pancake recipe - I use my mom's recipe so I don't link it, but there are tons if you do a quick google search
  • make smoothie cups, if needed

    Thursday:

    whatever tf you want (leftover night)
    • shop my favorite leftover containers here

    Friday:
    snack dinner

    Saturday:
    slow cooker or something quick
    chicken spaghetti (make homemade cream of chicken if unable to find)
    (make one small pyrex pan, and freeze the rest in these containers)
    (use frozen fajita chicken in freezer)

    Sunday:
    brett grills steak
    with roasted potatoes (explained in this post
    or roasted sweet potato cubes (I cook them much longer - until caramelized)  
    salad with ranch dressing (I use the first commenter's adaptations) 
    buttered rosemary rolls (use up rolls in freezer)
