Tuesday:
taco-ish tuesday
bean and cheese nachos
tortilla chips + chuy's refried beans + mexican cheese
broil or bake until cheese is melted and/or golden
Wednesday:
chicken/fish + vegetables

spinach or mixed greens + goat cheese + tj's candied pecans + halved grapes and/or diced apples + thinly sliced red onion (optional) + balsamic vinaigrette
+ oven roasted sweet potato cubes (except I roast these for muuuch longer - until caramelized and bits of crispy - probably like 45ish minutes)
+ buttermilk drop biscuits (I sometimes blend a bag of spinach into the buttermilk because WHY NOT, but this is totally optional)
Thursday:
sandwiches or leftovers

chicken pot pie + roasted green beans (olive oil + trader joe's onion salt at 400 until caramelized)

- chicken pot pie or like this (pulled from from freezer - my original recipe notes below)
- edited to add: I used these recipes as guidelines, and did the following:
- 3 potatoes, diced small + 4 TB butter, saute for 5-7 minutes until smells yummy
- add in 1/4 c flour until all potatoes are coated
- add in 3 cups broth + 1/4 c milk/cream/half and half (I used a combo of cream and half and half I needed to use up - let bubble and thicken
- add in 1 rotisserie chicken and 2 bags of frozen mixed vegetables
- add more broth/cream/milk/liquid until desired soupiness
- salt and pepper to taste
- puff pastry + egg wash on top
- freeze or bake
- (refer to recipes for temperatures - I just winged it)
- made enough for 1 small pyrex for dinner and 3 freezer meals
Friday:
pizza + movie
english muffin pizzas (from freezer) with veggie packed pizza sauce (I think I used spinach + steamed cauliflower + steamed carrots) and high-fiber english muffins
+ roasted green beans (olive oil + tj's onion salt, 400 degrees until shriveled and caramelized)

Saturday:

Sunday:
quick, slow cooker, or instant potbreakfast: breakfast casserole (pulled from freezer - I bake before freezing, cut casserole into "bars" like granola bars, then freeze so that we can heat up a few "bars" for breakfast)
dinner: frito pie (slow cooker chili + frito scoops + thick, shredded cheese) (freeze leftover chili)
- in the chili, use 1 pound of ground beef + 2 cans of pinto beans instead of 2 lbs beef, also add in lurking can of black beans in pantry
