1/20 menu plan

Monday:
meal prep monday
pigs in a blanket (use up crescent rolls in fridge)
roasted sweet potato cubes (I cook them much longer - until caramelized) 
roasted brussel sprouts (I kinda wing this recipe, so take these directions with a huge grain of salt)

  • i buy shredded brussel sprouts from HEB or Trader Joe's, I toss them in olive oil and generously sprinkle with garlic salt. I cook in an oven at 400 degrees (move the rack to the top third of the oven) and I cook until browned and crispy (like 30ish minutes? I DON'T KNOW). Then I drizzle them with TJ's Balsamic Glaze and put back in the oven for 2-3 miutes.
  • and use up yellow potatoes in pantry? chop up, coat in olive oil, sprinkle generously with garlic salt, cook in 400 degree oven (move rack to top third) until browned



meal prep monday:

    Tuesday: 
    taco-ish Tuesday
    favorite enchiladas (i think this is the recipe I love in her second cookbook, but omit the salsa, halve the peppers) (I also use rotisserie chicken) (can I saute the peppers instead of roast?)
    (try doubling and freezing in containers like these or these?)

    Wednesday:
    BLTs + leftover roasted sweet potato cubes (I cook them much longer - until caramelized)
    + blueberries

    Thursday:
    salmon caesar salad (use blackened salmon, use heb caesar dressing, add veggie pasta) 
    buttered rosemary rolls? (use rolls in freezer)

    • bake: chocolate brownie cookies (PSA: we keep our cookies in the freezer so that 1) we don't have to eat a boatload of cookies by ourselves in a week and 2) Brett likes to have something sweet at night, and this way he has an assortment to choose from)

    Friday:
    snack dinner or something quick
    out to eat

    Saturday:
    quick, slow cooker, or instant pot
    lunch:
    tuna melts + fruit
    roasted sweet potato cubes (I cook them much longer - until caramelized) 

    dinner:
    brett grills chicken
    chicken and cheese quesadillas
    mashed guac

    Sunday:
    quick, slow cooker, or instant pot
    brett gone for bro day
    haley eats leftovers + smoothies/toast
