Monday:
meal prep mondaychicken pot pie + roasted green beans (olive oil + trader joe's onion salt at 400 until caramelized)
grapefruit slices
- chicken pot pie or like this (pulled from from freezer - my original recipe notes below)
- edited to add: I used these recipes as guidelines, and did the following:
- 3 potatoes, diced small + 4 TB butter, saute for 5-7 minutes until smells yummy
- add in 1/4 c flour until all potatoes are coated
- add in 3 cups broth + 1/4 c milk/cream/half and half (I used a combo of cream and half and half I needed to use up - let bubble and thicken
- add in 1 rotisserie chicken and 2 bags of frozen mixed vegetables
- add more broth/cream/milk/liquid until desired soupiness
- salt and pepper to taste
- puff pastry + egg wash on top
- freeze or bake
- (refer to recipes for temperatures - I just winged it)
- made enough for 1 small pyrex for dinner and 3 freezer meals
Tuesday-Friday: I'm in Maui with my mom for a mother daughter trip to celebrate YAY (my mom started a tradition of taking each daughter on a solo mother/daughter trip wherever they wanted to go to celebrate their first pregnancy and I said LET'S GO BACK TO MAUI!)
Leave the following meals/ingredients for Brett (separate lunch portions, too):
- creamy garlic alfredo pasta from freezer
- (double sauce)
- (edited to add: I added in some riced cauliflower when sauteeing garlic, sauteed until plentyyyy soft, and it was perfect. I also used veggie pasta!)
- I froze in silicone muffin pans, and reheated slowlyyyyy on the lowest heat possible with a bit of milk. Do not try and break up the "pucks" of pasta! It breaks the pasta. Just let it heat and gently come apart. :) And I'd add more milk as needed to get the sauce to the consistency I like.

- BLT/club sandwich stuff
- hot dog stuff lol
- fixings for tacos
- best ground beef tacos (pulled from freezer) (use ground beef + add in riced caulflower when sauteeing onion + puree spinach into tomato sauce)
