- omit bacon for personal preferences - only because I hate mushy bacon - oven cook bacon to sprinkle some on brett's? use leftover bacon on Wednesday or for BLTs for lunch?
- if I'm feeling lazy, I'll use preshredded carrots (like, the kind for salads)
- I used four small potatoes and I used a little less broccoli (we were low) - then we put the broccoli florets in the food processor and essentially riced them (which we ended up loving the teeny tiny pieces of broccoli, as I detest large broccoli chunks in my soup)
tuesday:
leftover grilled chicken from sunday
rice + instant pot black beans (both prepped on sunday)
pico + crema + costco queso + mashed avo
wednesday:
creamy white chicken chili (SO good!!)
- I omit the chicken out of personal preference and will do four-five cans of beans total instead
- sometimes i'll add in cooked brown rice at the end at that's a lovely touch or I'll serve over rice - use rice prepped on sunday
serve with small pieces of leftover diced grilled chicken so brett can add chicken to his
+ leftover cornbread from sunday
thursday:
one of those amazing bagged, chopped salads (add in grilled chicken from sunday)
+ leftover cornbread from sunday
+ leftover potato packets from sunday OR or leftover soup from monday
+ whatever fruit's lurking around
