1/24 menu plan

eating through our freezer this week to keep dinner easy-ish since I'm hoping to do some major work this week on business things, tax prep, and deep cleaning our kitchen. 

sunday: grill and chill  



weekly meal prep:

  • prep dinner things: “What can I do now that will make eating at home this week easier?"
  • prep kk's food, if needed

  • make food for me
    • make a batch of this oatmeal for the week, if needed
    • make a batch of soft scrambled eggs, if needed
    • make an oven omelette for the week, if needed
    • make smoothie cups and/or yogurt parfaits, if needed

    • make snack boxes in divided glass containers like this, if needed:

    monday: 
    BLTs (to use bacon in freezer) or rotisserie chicken sandwiches
    my creamy chicken noodle soup (pulled from freezer, frozen in these containers)
    fruit or bagged salad

    tuesday:
    tamales (from freezer) 
    • big bowl of mashed avocado (+ pepitas + cotija, if desired)

    costco frozen fish + tartar sauce
    canned green beans + roasted potatoes (or tater tots, no shame)

    thursday:

    friday: fajita friday or leftovers
    breakfast tacos (use leftover potatoes + tortillas from Sunday, leftover bacon from Monday)
