Wednesday:
chicken/fish + veggies
fish sticks? tater tots or roasted veggies? or bagged salad?
- roasted brussel sprouts (I kinda wing this recipe, so take these directions with a huge grain of salt)
- i buy shredded brussel sprouts from HEB or Trader Joe's, I toss them in olive oil and generously sprinkle with garlic salt. I cook in an oven at 400 degrees (move the rack to the top third of the oven) and I cook until browned and crispy (like 30ish minutes? I DON'T KNOW). Then I drizzle them with TJ's Balsamic Glaze and put back in the oven for 2-3 miutes.
- maybe roasted sweet potato cubes (I cook them much longer - until caramelized)
- or roasted green beans (can the bags of green beans in the freezer be used?)(olive oil + tj's onion salt, 400 degrees until shriveled and caramelized)
+ leftover fruit

Thursday:
sandwiches or leftovers
english muffin pizzas (from freezer) with veggie packed pizza sauce (I think I used spinach + steamed cauliflower + steamed carrots) and high-fiber english muffins
Friday:
snack dinner or something quick
big bowl of mashed avocado + pepitas + cotija
(+ cheese quesadillas for B)- (I use my favorite avocado tool when dealing with avocados)
- Brett cooks qusadillas in a cast iron, but I'm obsessed with my quesadilla maker
Saturday:
quick, slow cooker, or instant pot
eat out

quick, slow cooker, or instant pot
