Monday:
meal prep monday - make something for freezer
- I like to halve the amount of sausage - and I like to slice the sausage, then quarter each slice, so it's smaller pieces (we like a higher ratio of sauce and tortellini to sausage)
- ALSO. We like to double the sauce + tortellini. BUT YOU DO YOU, BOO.
- And then at the end, I add a littleeee more cream/milk so that it's a bit saucier. And then I season to taste. This is not a health blog.

- food prep:
- prep produce + dinner ingredients for week
- oven omelette (use frozen hashbrowns in freezer + whatever cheese we have to use)
- cobbler for brett (use blueberries)

Tuesday:
taco-ish Tuesday
fish taco bowls (inspired by this recipe)
frozen breaded cod from costco (cooked in air fryer) + tortillas (just in case)
cabbage + avocado + lime + pico (we do regular and mango) + sour cream + cheese + creamy jalapeno (from chuy's)
mashed avo (I use my favorite avocado tool when dealing with avocados) + chips for me
- food prep:
- assemble yogurt parfaits for the week, if needed
- (yogurt + hempseeds + chia seeds + berries + almonds...then add granola just before eating)

- this week: refried beans, and queso LOL with blueberries
- originally planned on also adding mexican rice recipe (I omit oil, use dried onion, and throw everything in my rice cooker)
- refried beans are from Chuy's, but I love this recipe
- I grab this green chile queso from Costco, but I also love this HEB version and this homemade version
- trying to prep 3-4 snack boxes ahead of time to keep in the fridge, as Pregnant Haley gets ravenously hungry these days with no warning whatsoever

Wednesday:
chicken/fish + veggies
fish sticks with roasted veggies + bagged salad
- roasted brussel sprouts (I kinda wing this recipe, so take these directions with a huge grain of salt)
- i buy shredded brussel sprouts from HEB or Trader Joe's, I toss them in olive oil and generously sprinkle with garlic salt. I cook in an oven at 400 degrees (move the rack to the top third of the oven) and I cook until browned and crispy (like 30ish minutes? I DON'T KNOW). Then I drizzle them with TJ's Balsamic Glaze and put back in the oven for 2-3 miutes.
- maybe roasted sweet potato cubes (I cook them much longer - until caramelized)

Friday:
snack dinner or something quick
- double biscuit recipe for freezer
