3/9 menu plan

*cleaning out the freezer/pantry this week*

Monday:
meal prep monday
sausage and cheese tortellini pasta (from freezer - seeing how this freezes/reheats - update: BEAUTIFULLY. threw into crockpot on low, waited until thawed to stir, added in more liquid)
+ caesar salad
  • I like to halve the amount of sausage - and I like to slice the sausage, then quarter each slice, so it's smaller pieces (we like a higher ratio of sauce and tortellini to sausage)
  • ALSO. We like to double the sauce + tortellini. BUT YOU DO YOU, BOO.
  • And then at the end, I add a littleeee more cream/milk so that it's a bit saucier. And then I season to taste. This is not a health blog.

Tuesday: 
taco-ish tuesday
fish taco bowls (inspired by this recipe)
frozen breaded cod from costco (cooked in air fryer) + tortillas (just in case)
cabbage + avocado + lime + pico (we do regular and mango) + sour cream + cheese + creamy jalapeno (from chuy's)

    Wednesday:
    chicken/fish + veggies
    saucy pulled pork sandwiches (use bbq sauce in fridge)
    pulled from freezer (I froze leftovers in containers like this)
    with good pickles, coleslaw, and hawaiian rolls
    tater tots
    • note for next time on pulled pork: I thinkkk I prefer to sear it and cook it in crockpot (and, possibly, once finished, broil shredded pulled pork for a few minutes on a sheet pan to get caramelized edges?)
    • shop my favorite cooking items

    Thursday:
    bean and cheese nachos (see this post for directions)
    • shop my favorite leftover containers here

    Friday:
    leftovers

    Saturday:
    BLTs or club sandwiches + chopped avocado ranch salad from costco + fruit

    Sunday:
    quick, slow cooker, or instant pot
    picked up chuy's takeout one last time before hunkering down the next 14+ days
    (got extra refried beans, green chile rice, and tortilla soup to freeze)
