5/20 menu plan

Monday:
english muffin pizzas (from freezer) with veggie packed pizza sauce and high-fiber english muffins + ranch dressing (use first comment's modifications)

Tuesday:
leftover burgers + hot dogs
or leftover club sandwiches + honey mustard dipping sauce

Wednesday:
ravioli casserole (from freezer) + garlic bread + caesar salad

Thursday:
avocado toasts (dave's killer bread + mashed avo + TJ's everything bagel seasoning) 
mixed greens + goat cheese + diced apple + candied pecans + balsamic vinaigrette
Friday:
  • dinner: movie date

Saturday:
  • bake: brownie cookies (PSA: we keep our cookies in the freezer so that 1) we don't have to eat a boatload of cookies by ourselves in a week and 2) Brett likes to have something sweet at night, and this way he has an assortment to choose from)
  • dinner: bean and cheese nachos 
    crockpot black beans + thick, shredded mexican cheese over tortilla chips, stick under broiler until cheese is golden
    serve with mashed avocado or creamy jalapeno

Sunday:
breakfast: breakfast casserole (from freezer)
hamilton pool picnic lunch: avocado egg salad sandwiches, turkey sandwiches, chips, fruit
