7/25 menu plan

easyyyyy dinners this week to clean out the freezer in the hopes we can go swim with Brett each evening :)


sunday: grill and chill  

  • read all the ways our weekly ritual of grill and chill helps us here
    • brett grills steak
      • roasted asparagus + grilled corn on the cob
      • twice baked potato casserole bc im trashy
        • (except i omit the sour cream, the chives, the garlic powder, and sometimes the bacon - and i mix in a little bit of cream cheese instead. bc i'm a purist. who also hates sour cream.)
      • copycat olive garden salad
  • brett loves his grill, his smoker, and his prep table (see other grill and chill favorites here)

weekly meal prep:
prep dinner things: “What can I do now that will make eating at home this week easier?"
  • cut or supreme citrus 
  • prep produce for the week
  • make food for me (and KK)
    • *I adapt all these things for KK if need be if it's something we will share

    • make a batch of this oatmeal for the week, if needed
      • or some sort of baked oatmeal 
      • or some sort of overnight oats like this
    • make a batch of beans and/or rice/grains, if needed
      • KK and I LOVE rice and beans for breakfast/lunch!
    • make a batch of waffles, pancakes, or muffins, if needed
      • (or make a batch of sheet pan pancakes, like these or these)
      • freeze leftovers, or double the batch and freeze half
    • make eggs for the week, if needed 
    • make smoothie cups and/or yogurt parfaits, if needed

    • make snack boxes in divided glass containers like this, if needed:

    monday: sandwich night
    • diy sandwich bar (explained in above post) with brett's garden tomatoes 


    tuesday:
    tamales + mashed avo + queso
    • our halloween tradition is to order tamales from this restaurant to be delivered to our door (they ship nationwide) - and we order extraaa to keep in the freezer as a quick dinner in the coming months (and to make the shipping costs worth it) - i wrote a whole instagram post on this here if you'd like to know more!

    • I use my favorite avocado tool when dealing with avocados


    wednesday:
    meatballs + tortellini + pasta sauce 
    • (i add a touch of half and half to the pasta sauce bc i like it an ooch creamy)


    thursday:
    with macaroni and cheese, those frozen Trader Joe's carrots in the freezer, and leftover fruit
    or use anything leftover from sunday?


    friday: fajita friday or leftovers or something from the freezer
      • meatball subs with leftover meatballs and sauce and Jimmy John's bread??
      • shop my favorite leftover containers here
    • also, on fridays I menu plan + order groceries
