7/18 menu plan

 sunday: grill and chill  


weekly meal prep:
prep dinner things: “What can I do now that will make eating at home this week easier?"
  • cut or supreme citrus 
  • prep produce for the week
  • make food for me (and KK)
    • *I adapt all these things for KK if need be if it's something we will share
      • see more about feeding KK here
    • make a batch of this oatmeal for the week, if needed
      • or some sort of baked oatmeal (trying this recipe this week)
      • or some sort of overnight oats like this
    • make a batch of beans and/or rice/grains, if needed
      • KK and I LOVE rice and beans for breakfast/lunch!
    • make a batch of waffles, pancakes, or muffins, if needed
      • (or make a batch of sheet pan pancakes, like these or these)
      • making yogurt muffins this week (make plain version so we can enjoy with butter/jam)
      • freeze leftovers, or double the batch and freeze half
    • make eggs for the week, if needed 
    • make smoothie cups and/or yogurt parfaits, if needed

    • make snack boxes in divided glass containers like this, if needed:

    monday: sandwich night
    caprese avocado toast + sweet potato puffs in freezer


    tuesday:
    rotisserie chicken
    garlic green beans to use up those cans in the pantry (i usually omit cheese)
    BLT salad with ranch dressing 
    • probably will use my go-to ranch dressing (use first comment's changes)
    • omit avocado from salad recipe bc i'm weird
    • make extra extra homemade croutons to repurpose the rest of the week
    • store dressing in my favorite dressing container


    wednesday:
    salad mix + leftover ranch dressing + brett's million tomatoes
    • (use first comment's changes) 
    • (could also dip the sheet pan sausage/veggies into the ranch)
    use leftover homemade croutons from tuesday


    thursday:
    leftover chicken (from sunday or tuesday)
    caprese garlic bread (use trader joe's balsamic glaze)
    salad + caesar dressing + leftover homemade croutons from tuesday


    friday: fajita friday or leftovers or something from the freezer

    chicken nuggets and tater tots
    with leftover salad + lurking fruit
