7/11 menu

sunday: grill and chill  

  • read all the ways our weekly ritual of grill and chill helps us here
    • brett grills chicken for chicken caesar wraps 
      • use refrigerated caesar dressing (near the produce) - its SO MUCH BETTER
      • we use halved cherry tomatoes, romaine lettuce, and shredded (not powdered!) parmesan cheese with good flour tortillas
      • brett crumbles croutons (either caesar croutons, or cheese/garlic croutons) to sprinkle on top - this part is essential to add crunch to every bite
      • brett adds thinly sliced red onion to his

    • brett grills some plain chicken breasts for later this week

weekly meal prep:
prep dinner things: “What can I do now that will make eating at home this week easier?"
  • cut or supreme citrus 
  • prep produce for the week
  • make food for me (and KK)
    • *I adapt all these things for KK if need be if it's something we will share

    • make a batch of this oatmeal for the week, if needed
      • or some sort of baked oatmeal (trying this recipe this week)
      • or some sort of overnight oats like this
    • make a batch of beans and/or rice/grains, if needed
      • KK and I LOVE rice and beans for breakfast/lunch!
    • make a batch of waffles, pancakes, or muffins, if needed
      • (or make a batch of sheet pan pancakes, like these or these)
      • making yogurt muffins this week (make plain version so we can enjoy with butter/jam)
      • freeze leftovers, or double the batch and freeze half
    • make eggs for the week, if needed 
    • make smoothie cups and/or yogurt parfaits, if needed

    • diy sandwich bar (explained in above post) with brett's garden tomatoes 

    tuesday:
    copycat chipotle bowls

    wednesday:
    smoked sausage and peppers with rice (use hatch chile sausage in freezer)
    with big bowl of whatever fruit. or that bagged southwest salad we like.


    thursday:
    with roasted potatoes, garlic green beans, and leftover fruit


    friday: fajita friday or leftovers or something from the freezer

    avocado chicken salad with leftover grilled chicken and leftover bacon
    pita chips + toasted french bread (use french bread in freezer)
    melon + peaches
