2/28 menu plan

 sunday: grill and chill  



weekly meal prep:
prep dinner things: “What can I do now that will make eating at home this week easier?"
  • cut or supreme citrus 
  • oven roast bacon for tonight, tomorrow, and tuesday (I love my racks for this) 
  • could prep tuesday's potatoes? or wednesday's sheet pan meal? so that both can just be dumped onto a baking sheet for dinner? 
  • make food for me (and KK)
    • *I adapt all these things for KK if need be if it's something we will share

    • make a batch of this oatmeal for the week, if needed
      • make oatmeal cups for KK (freeze leftovers for future weeks)
    • make a batch of waffles, pancakes, or waffles, if needed
    • make a batch of soft scrambled eggs, if needed
    • make an oven omelette for the week, if needed
    • make smoothie cups and/or yogurt parfaits, if needed

    monday: soup + sandwich night
    diy sandwich bar
    with loaded broccoli cheese bacon soup 
    • (from freezer - frozen in these containers)
    • omit bacon for personal preferences - only because I hate mushy bacon - oven cook bacon to sprinkle some on brett's? use leftover bacon on Wednesday or for BLTs for lunch?
    • if I'm feeling lazy, I'll use preshredded carrots (like, the kind for salads)
    • I used four small potatoes and I used a little less broccoli (we were low) - then we put the broccoli florets in the food processor and essentially riced them (which we ended up loving the teeny tiny pieces of broccoli, as I detest large broccoli chunks in my soup) 

    tuesday:
    cowboy quiche (brett's FAVORITE)
    double recipe, oven roast the bacon, and use four normal pie pans - her doubled recipe is for two deep dish? i'll make four pies - three for freezer, one for dinner? PRAY FOR ME. WILL REPORT BACK. (this works! and i did 350 degrees for 40-45ish min)
    serve with bagged, chopped salad or fruit 
    or with roasted sweet potato cubes(I don't peel them and I cook them much longer - until caramelized - like in this photo)
    • this recipe is a great reference for how to freeze quiche


    wednesday:
    • except roast the green beans longer - instead of how the recipe says - bc I prefer my green beans super roasted, like this
    • add in leftover cherry tomatoes in the fridge?
    • drizzle with trader joe's balsamic glaze at the end, sprinkle with good parmesan - bake for 2 more minutes, or leave as is?
    serve with leftover cornbread
    or with leftover roasted sweet potato cubes
    or with leftover fruit lurking around
