3/7 menu plan

it's a wedding week for me, so meals are super easy  


sunday: grill and chill  



weekly meal prep:
prep dinner things: “What can I do now that will make eating at home this week easier?"
  • make my favorite chicken noodle soup (but omit chicken and increase veggies - i'm feeling a noodle veggie soup) for monday since I get flowers on monday this week and I want to do 0% dinner work
  • cook italian sausage for thursday 
  • bake apples for KK
  • roast veggies + thaw frozen fruit + thaw frozen waffles/muffin tin frittatas for easy meals for KK this week

make food for me (and KK)
  • *I adapt all these things for KK if need be if it's something we will share

  • make a batch of this oatmeal for the week, if needed
    • make oatmeal cups for KK, if needed (freeze leftovers for future weeks)
  • make a batch of waffles, pancakes, or muffins, if needed
    • make baby muffins for KK
    • freeze leftovers, or double the batch and freeze half
  • make a batch of soft scrambled eggs, if needed
  • make an oven omelette for the week, if needed
  • make smoothie cups and/or yogurt parfaits, if needed

  • make snack boxes in divided glass containers like this, if needed:

monday: soup + sandwich night


tuesday:
tamales (from freezer, thanks to this holiday tradition)
  • + big bowl of mashed avocado
  • whatever fruit we have lying around


wednesday:
maggie's wedding


thursday:
(add in crumbled italian sausage to brett's bowl)
leftover salad from sunday + leftover bread from sunday


friday: fajita friday or leftovers
