2/14 menu plan

**it's an easy-ish, super flexible week of dinners since I have a wedding I'm working this week :)

JK JK JK TEXAS LOST ITS EVERLOVING MIND THIS WEEK SO PROCEED WITH CAUTION 

sunday: grill and chill



weekly meal prep:
prep dinner things: “What can I do now that will make eating at home this week easier?"
  • make crockpot potato chowder (i omit onion) for monday
  • oven roast bacon for potato soup + sandwich bar (+BLTs for me for lunch this week)
  • cut or supreme citrus
  • make food for me (and KK)
    • *I adapt all these things for KK if need be if it's something we will share

    • make a batch of this oatmeal for the week, if needed
      • make oatmeal cups for KK (freeze leftovers for future weeks)
    • make a batch of waffles, pancakes, or waffles, if needed
      • freeze leftovers, or double the batch and freeze half
    • make a batch of soft scrambled eggs, if needed
    • make an oven omelette for the week, if needed
    • make smoothie cups and/or yogurt parfaits, if needed

    • make snack boxes in divided glass containers like this, if needed:

    monday: soup + sandwich night
    bacon tomato sandwiches + 
    crockpot potato chowder (i omit onion) 


    tuesday:
    freezer croissant breakfast sandwiches (eggs, bacon, and cheese)
    cut or supreme citrus


    wednesday:
    + bagged salad + turkey sandwiches


    thursday:
    slow cooker chili (from freezer, frozen in these containers)
    (I usually double the beans, and do all pinto, or half pinto and kidney, sometimes i use ground turkey and/or I halve the meat -- like this time, I did 2lbs ground turkey, 2 cans pinto, 2 cans kidney)(I omit the adobo chilies, and I double the green chiles)
    add cheese + sour cream + fritos for frito pie 


    friday: fajita friday or leftovers
