sunday: 
grill and chill - brett grills something for dinner, brett grills whatever protein(s) we need for the upcoming week, and we chill

monday:
meal prep monday
caprese avocado toast (use trader joe's balsamic glaze + thick shredded mozz, omit lemon juice for personal preference) 
  • with oven roasted sweet potato cubes
    • (except I don't peel these and I roast these for muuuch longer - until caramelized and bits of crispy - probably like 45ish minutes)


  • meal prep:
    • shop my favorite meal prep goodies here
      • my version of Meal Prepping is asking myself, “What can I do now that will be helpful in the future?” AKA “What can I do now to make Thursday’s dinner easier?”
      • cook bacon for blts + waffle wednesday
      • cut fruit/produce for week
      • slice french bread for tonight's avocado toast
    • visit my Pinterest boards to see where I save all food inspiration and ideas, like yogurt parfaits and snack boxes

tuesday:
taco-ish tuesday
  • fish taco bowls (inspired by this recipe)

    • frozen fish from costco (cooked in air fryer) + tortillas (just in case brett prefers tacos vs bowls)
    • cabbage + avocado + lime + pico (we do regular and mango) + sour cream + cheese + creamy jalapeno (from chuy's)
    • mashed avo + chips for me

wednesday:
waffle wednesday
pancakes or waffles (waffles pulled from freezer stash this time)
+ scrambled eggs? bacon? fruit? smoothies?
  • freeze extra pancakes/waffles or make pancake muffins with any extra batter in this mini muffin pan
    • I use an oatmeal pancake recipe - I use my mom's recipe so I don't link it, but there are tons if you do a quick google search

  • make smoothie cups, if needed
