sunday: 
grill and chill - brett grills something for dinner, brett grills whatever protein(s) we need for the upcoming week, and we chill
brett grills fajita chicken
(fajitas? quesadillas? burrito bowls? dip meat in queso and mashed avocado? anything goes.)
  • big bowl of mashed avocado
  • brett cooks his quesadillas in the cast iron, but I love my quesadilla maker
  • freeze leftover grilled meat by end of the week

monday:
meal prep monday
salad/sandwich/wraps/soups/bowls
  • chicken caesar wraps +  roasted sweet potato cubes (or leftover fruit)
    • use grilled chicken from Sunday
    • use refrigerated caesar dressing (near the produce) - its SO MUCH BETTER
    • we use halved cherry tomatoes, romaine lettuce, and shredded (not powdered!) parmesan cheese with good flour tortillas
    • brett crumbles croutons (either caesar croutons, or cheese/garlic croutons) to sprinkle on top - this part is essential to add crunch to every bite

taco-ish tuesday
king ranch casserole (from freezer) + bagged chopped salad

wednesday:
  • bean and cheese nachos
  • make smoothie cups, if needed

best tomato soup (I omit sherry for personal preferences + add 1 c of arborio rice)
+ italian grilled cheese sandwiches (we love using our panini press) or turkey sandwiches
  • add arborio rice to soup like how this lady does in her tomato soup (I also love her post for freezer ideas!)
