sunday:
grill and chill - brett grills something for dinner, brett grills whatever protein(s) we need for the upcoming week, and we chill
- brett grills chicken
- chicken caesar wraps
- use refrigerated caesar dressing (near the produce) - its SO MUCH BETTER
- we use halved cherry tomatoes, romaine lettuce, and shredded (not powdered!) parmesan cheese with good flour tortillas
- brett crumbles croutons (either caesar croutons, or cheese/garlic croutons) to sprinkle on top - this part is essential to add crunch to every bite

- my version of Meal Prepping is asking myself, “What can I do now that will be helpful in the future?” AKA “What can I do now to make Thursday’s dinner easier?”
- visit my Pinterest boards to see where I save all food inspiration and ideas, like yogurt parfaits and snack boxes
- assemble yogurt parfaits for the week, if needed
- (yogurt + hempseeds + chia seeds + fruit...then add granola just before eating)

taco-ish tuesday
quesadillas with leftover grilled chicken
- Brett cooks quesadillas in a cast iron, but I'm obsessed with my quesadilla maker
- big bowl of mashed avocado (+ pepitas + cotija, if available)

wednesday:
waffle wednesday
pancakes or waffles (waffles pulled from freezer stash this time)
+ scrambled eggs? bacon? fruit? smoothies?

- freeze extra pancakes/waffles or make pancake muffins with any extra batter in this mini muffin pan
- I use an oatmeal pancake recipe - I use my mom's recipe so I don't link it, but there are tons if you do a quick google search

- my favorite salad: spinach or mixed greens + goat cheese + tj's candied pecans + halved grapes and/or diced apples + thinly sliced red onion (optional) + leftover grilled chicken (or whatever protein - I also love blackened salmon - but optional) + balsamic vinaigrette
- make mason jar salads with leftovers like this

- frozen luby's macaroni and cheese (like, from the freezer section.)
friday:
risotto (omit mushrooms bc I hate them, omit wine bc I never have it)
- add in leftover grilled chicken
roasted brussel sprouts (see below) + roasted broccoli

- I make risotto in this favorite dutch oven of mine (I think mine is this size?) and wooden spoons like these
- roasted brussel sprouts (I kinda wing this recipe, so take these directions with a huge grain of salt)
- i buy shredded brussel sprouts from HEB or Trader Joe's, I toss them in olive oil and generously sprinkle with garlic salt. I cook in an oven at 400 degrees (move the rack to the top third of the oven) and I cook until browned and crispy (like 30ish minutes? I DON'T KNOW). Then I drizzle them with TJ's Balsamic Glaze and put back in the oven for 2-3 minutes.
