dinner: pigs in a blanket + loaded baked potato soup
(potato soup notes: double cheese - I used 2 c sharp cheddar, omit onions) (also, to bake potatoes, I put them in a cold oven, turn oven to 425, then take them out after an hour -- for some reason when I followed her directions, they wouldn't be cooked all the way sometimes)
meal prep: amazing greek feta dip with last week's leftover tomatoes and feta, make egg muffins, prep all produce, shred rotisserie chicken, grate zucchini, make burrito dipping sauce, prep ranch dressing
Tuesday:
taco tuesday
chicken BLT burritos (use rotisserie chicken) (edited to add: brett did NOT like the sauce. he much prefers a wrap with ranch or caesar dressing)
Wednesday:
fish + fruit + veggies
costco cod (or heb stuffed salmon)
- bake: brownie cookies (PSA: we keep our cookies in the freezer so that 1) we don't have to eat a boatload of cookies by ourselves in a week and 2) Brett likes to have something sweet at night, and this way he has an assortment to choose from)
- make: freezer PB&J sandwiches
Thursday:
Friday:
pizza or pasta
naan pizza (use up lurking pepperoni in freezer) pizza or pasta
+ ranch dressing (use first comment's modifications)
Sunday:
quick, slow cooker, or instant pot
