sunday:
breakfast:
- banana pancakes or my mom's oatmeal pancakes
- freeze leftovers, or eat the leftovers this week for breakfast/snack/lunch
this week's meal prep:
- make a batch of this oatmeal for the week
- bake a batch (or two) of my favorite pb chocolate chip cookies (freeze leftovers)
- wash + destem grapes, divide into these into individual mason jars to make easy grab and go snacks
- see my meal prep favorites in the next section
dinner: grill and chill
- brett grills fajita meat for burrito bowls (+ extra grilled chicken for wednesday)
- mexican rice (I omit the vegetable oil and just throw it all in my rice cooker)
- slow cooker refried beans
- guac...or a big bowl of mashed avo
- sometimes I add in cotija and pepitas, as shown here
- obsessed with my avocado tool
- queso (except we usually just do pickled jalapenos or green chiles as our add-ins)
- crema + quesadilla cheese + heb's that green sauce or trader joe's jalapeno sauce + pico + diced red onions + that trader joe's cotija street corn frozen thing

- brett loves his grill, his smoker, and his prep table (see other grill and chill favorites here)
- when the weather is yucky, we use (and love!) our cast iron grill pan indoors
my weekly meal prep favorites:
- prep dinner things:
- asking myself: “What can I do now that will make eating at home this week easier?"
- ex: chop vegetables, pull things out of the freezer to thaw, make salad dressing, cook rice, see if anything this week can be made ahead of time, etc.
- prep some sort of dessert for the week
- yep! one of my favorite podcasters said this is an incredibly easy way to plan joy into your week and I SO agree.
- make some things to make breakfasts/snacks/lunches smoother
- a batch of this oatmeal for the week, if needed
- or some sort of baked oatmeal
- or some sort of overnight oats like this
- prep any produce, if needed
- cut apples for the week, chop up melon, wash + destem grapes, supreme citrus (or use my favorite method to slice citrus), etc.
- I do like to prep some of these into individual mason jars (or my favorite cups) to make easy grab and go snacks.
- make a batch of beans and/or rice/grains, if needed
- KK and I LOVE rice and beans for breakfast/lunch!
- make a batch of waffles, pancakes, or muffins, if needed
- (or make a batch of sheet pan pancakes, like these or these)
- freeze leftovers, or double the batch and freeze half
- make a stack of PB&Js for the freezer, if needed

- we use dave's killer bread, a frozen pb&J thaws beautifully in my purse/car/swim bag, and it makes the BEST snack.
- make eggs for the week, if needed
- like these egg cups, this sheet pan omelette, or whatever
- or make hardboiled eggs using this method
- make smoothie packs, if needed

- so let's be real, it'll probably be a bacon, turkey, mashed avocado, and tomato sandwich bar
- but let's do it with my favorite jimmy john's bread - explained in this post
- i love to do some oven roasted bacon
- I love my oven rack and baking sheets for baking bacon
- we also love our tomato knife + our panini press
tuesday:
use sunday's leftovers to make chicken enchiladas con queso
(use the leftover grilled fajita meat brett's filling, leftover refried beans as my filling?)
(or ignore the recipe's filling recipe and instead fill each enchilada with leftover fajita meat, refried beans, and rice? we'll just follow our heart - and the amount of leftovers we have - for this dinner.)
wednesday:
- use grilled chicken that brett grilled on sunday
- except I used mixed greens and I omit the avocado
thursday:
frozen fish + leftover salad
roasted sweet potato cubes (I don't peel them, I cook them much longer - until caramelized)
orange berry fruit salad (omit poppy seeds for personal preference)
friday: fajita friday or takeout/drive-thru or leftovers
- take that leftover bacon and that leftover queso, and let's make Kerbey Lane's Eggs Fransisco: toast an english muffin, top with scrambled eggs, avocado, bacon, and a tomato slice. and then drizzle the whole thing in queso.

saturday: snack dinner saturday
tuna melts: mix tuna with mayo/mustard, spread onto french bread slices, top with tomato slice and a slice of provolone cheese. broil until cheese is melted and gets those spectacular golden spots.
