- my version of Meal Prepping is asking myself, “What can I do now that will be helpful in the future?” AKA “What can I do now to make Thursday’s dinner easier?”
- I love this article for inspiration

- loaded broccoli cheese bacon soup
- (freeze leftovers - use these containers)
- omit bacon for personal preferences - only because I hate mushy bacon - oven cook bacon to sprinkle some on brett's?
- if I'm feeling lazy, I'll use preshredded carrots (like, the kind for salads)
- I used four small potatoes (maybe should have done five) and I used a little less broccoli (but we were low) - then we put the broccoli florets in the food processor and essentially riced them (which we ended up loving the teeny tiny pieces of broccoli, as I detest large broccoli chunks in my soup) - but because of these two things, my soup was not as chunky and thick as hers. still tasted amazing!
- caesar salad (add in leftover grilled chicken)
- leftover bread from sunday
tuesday:
- use grilled chicken
- use refrigerated caesar dressing (near the produce) - its SO MUCH BETTER
- we use halved cherry tomatoes, romaine lettuce, and shredded (not powdered!) parmesan cheese with good flour tortillas
- brett crumbles croutons (either caesar croutons, or cheese/garlic croutons) to sprinkle on top - this part is essential to add crunch to every bite
- brett adds thinly sliced red onion to his
- see this post and this post for photos + ingredients + step by step
roasted sweet potatoes? (i don't peel them, I use real parmesan - not powdered, and I cook much longer)
wednesday:
avocado egg salad sandwiches (omit vinegar, sometimes I use plain greek yogurt instead of mayo)
leftover roasted sweet potatoes + leftover cut or supreme citrus (or peeled mandarins that need to be used up)
offer bacon and tomatoes for brett's sandwich, too?
roasted broccoli + roasted zucchini
fajita friday or f it friday
leftovers
leftover soup (see "monday" for recipe) + leftover caesar salad + turkey and tomato sandwiches
- grab fajita family pack from chuy's
- orrrr eat leftovers, depending on fridge situation + our mood
- also, on fridays I menu plan + order groceries. I try to post my step-by-step each week in my instagram stories if you want to see how I menu plan, but I also wrote a blogpost about how I menu plan.
- see this quick instagram post on my friday routines here.
- see this blogpost for a list of all our routines, if you'd love some ideas.
saturday:
- snack dinner saturday
- see my "snack dinner" highlight on my Instagram for more
- finger foods, apps, cheese + crackers, various produce*, roasted veggies, dips, anything goes
- I'm a relatively picky eater, so I use this time to try produce I haven't necessarily liked before + experiment with different ways to cook/eat said produce - serving a new food alongside, say, cheese and crackers makes it less threatening to me
- peek at my "snack dinner" pinterest board where I find inspiration
- aaaand this article in favor of snack dinner (+ ideas)
- my favorite place to learn cheese plates is this instagram account or her book
- if our budget allows, we love renewing our Cheese of the Month membership to celebrate our wedding anniversary - we discovered this cheese shop while dating in college, so it's one of our favorite nostalgic things. It’s pricey, but perfect for an at-home date, and perfect for our weekly snack dinner.
