8/26 menu plan

Monday:
soup, salad, or bowls/meal prep monday
chicken pot pie or like this (use rotisserie chicken + puff pastry)
edited to add: I used these recipes as guidelines, and did the following:
3 potatoes, diced small + 4 TB butter, saute for 5-7 minutes until smells yummy 
add in 1/4 c flour until all potatoes are coated
add in 3 cups broth + 1/4 c milk/cream/half and half (I used a combo of cream and half and half I needed to use up - let bubble and thicken
add in 1 rotisserie chicken and 2 bags of frozen mixed vegetables
add more broth/cream/milk/liquid until desired soupiness
salt and pepper to taste
puff pastry + egg wash on top
freeze or bake
(refer to recipes for temperatures - I just winged it)
made enough for 1 small pyrex for dinner and 3 freezer meals

meal prep monday: sweet potato waffles (freeze) + no bake oatmeal balls

Tuesday: 
best anytime baked chicken meatballs (double, freeze)
creamy garlic alfredo pasta (double sauce)
can the sauce be doubled and this pasta be frozen as a dish or in muffin tins? 
hide cauliflower in the alfredo sauce like this? or is that gross? 
(edited to add: I added in some riced cauliflower when sauteeing garlic and it was perfect)

Wednesday:
best ground beef tacos (triple for freezer) (use ground beef + ground turkey in freezer + add in riced caulflower when sauteeing onion + puree spinach into tomato sauce)
  • bake: peanut butter chocolate chips cookies (PSA: we keep our cookies in the freezer so that 1) we don't have to eat a boatload of cookies by ourselves in a week and 2) Brett likes to have something sweet at night, and this way he has an assortment to choose from)

Thursday:
sandwiches or leftovers

Friday:
date

Saturday:
snack dinner saturday
cheese + crackers + leftover fruit

Sunday:
quick, slow cooker, or instant pot
eat with family
