2019 menu changes

Shockingly on January 1st, I'm thinking of how I want to tweak our cooking and eating. Because if I'm being honest and realistic, I know one of two things:
1) we can always use more produce in our lives, and
2) I don't always *gasp!* feel like cooking.
(The latter shouldn't shock anyone, considering how frequently and furiously I stock my freezer for just that reason.)

I read somewhere in the depths of Instagram of a lady who makes the same grain bowl thing every Sunday since she and her family benefit from the leftovers the rest of the week.

GENIUS.

What if I did the same? I know Brett likes to grill Saturday and Sunday. It would be amazing if one of those nights he grilled some protein and I made a spread of different ingredients to make dinner sides or salads - oftentimes we miss out on produce simply because I'm too tired to chop them up.

Similarly, I would love if another night a week I just make a great pot of beans - either with cornbread or as a burrito-bowl situation - and another night we enjoy the good ol' standby of a sandwich. Like, a good sandwich! Or pizza! I love when I hear of families that have a standing weekly pizza night. Fridays can be reserved for exploring new restaurants or takeout options - let's call this the weekly date night because darn it, my husband is the cutest and living near Austin is meant to be enjoyed. (Slash I'm pretty sure if we're eating beans once a week, it might free up a bit more of the grocery budget.)

Writing my new weekly template below so that I can paste it into each new week when menu planning:

Friday: Date night

Saturday: Brett grills fajitas

Sunday: Brett grills + I prep for week

Monday: Beans or leftovers

Tuesday: Cook, or pull from freezer

Wednesday: Cook, or pull from freezer

Thursday: Sandwiches, pizza, or quesadillas/nachos
