Sunday: loaded chopped salad/prep for week

chicken + cheese + pico quesadillas
Monday: beans
black beans + mashed avocado on a tostada with lettuce, cheese, and crema
(2 c dried black beans + 6-8 c good, quality broth in crockpot on high for 8 hours)
(in the last hour, mash some of the beans to release some of the starch -- makes for thicker, syrupy beans YUM)
Tuesday: cook or pull something from freezer
make tater tot casserole (omit bacon), cut citrus
king ranch casserole (from freezer) + citrus
Wednesday: cook or pull something from freezer
cheesy broccoli quinoa casserole (from freezer) + salad
balsamic vinaigrette + spinach + slice apples + crumble goat cheese + quinoa + candied pecans
Thursday: Sandwiches, pizza, or quesadillas/nachos
crunchy black bean tacos or chicken+cheese quesadillas
