6/20 menu plan

 sunday: grill and chill  

  • read all the ways our weekly ritual of grill and chill helps us here
  • brett grills burgers
    • he's getting a massage on Father's Day, so I want grill and chill to be easy :)
    • our Father's Day tradition is I make him his beloved spice cake
  • brett loves his grill, his smoker, and his prep table (see other grill and chill favorites here)

weekly meal prep:
prep dinner things: “What can I do now that will make eating at home this week easier?"
  • cut or supreme citrus 
  • prep any produce
  • make food for me (and KK)
    • *I adapt all these things for KK if need be if it's something we will share
      • see more about feeding KK here
    • make a batch of this oatmeal for the week, if needed
      • or make a batch of baked oatmeal for the week - like this! (I learned I love to eat it warm with milk or greek yogurt YUM)
      • or make fruity baked oatmeal cups for KK - I'll sometimes change out the fruit, double the recipe, and freeze leftovers. you're welcome, future haley!
    • make a batch of beans and/or rice/grains, if needed
      • KK and I LOVE rice and beans for breakfast/lunch!
    • make a batch of waffles, pancakes, or muffins, if needed
      • (or make a batch of sheet pan pancakes, like these or these)
      • freeze leftovers, or double the batch and freeze half
    • make eggs for the week, if needed 
    • make smoothie cups and/or yogurt parfaits, if needed

    • make snack boxes in divided glass containers like this, if needed:

    monday: sandwich night
    best tomato soup (I omit sherry for personal preferences + add 1 c of arborio rice)
    • add arborio rice to soup like how this lady does in her tomato soup (I also love her post for freezer ideas!)
    • freeze leftovers in containers like this or this
    + my favorite salad
    • spinach or mixed greens + goat cheese + tj's candied pecans + halved grapes and/or diced apples + thinly sliced red onion (optional) + grilled chicken (or whatever protein - optional) + balsamic vinaigrette 
      • make mason jar salads with leftovers like this

    + italian grilled cheese sandwiches or normal grilled cheese (we love using our panini press)


    tuesday:
    • I usually make a double/triple batch of this recipe and freeze the leftovers, as these freeze SO WELL and i love having frozen taco meat in my freezer for a quick dinner 
    • see my favorite freezer containers here, but I love to freeze my taco meat in these containers
    • use ground beef and/or ground turkey 
    • I give the onion a few minutes head start before adding in meat, and I add in riced cauliflower when sauteeing onion 
    • and/or sometimes I blend spinach into the tomato sauce (I don't measure how much spinach or cauliflower, sorry!) by literally throwing the tomato sauce and some spinach into a blender
    • crunchy tacos + mashed avocado + pico + diced tomatoes + diced red onions + TJ's jalapeno sauce + shredded lettuce + quesadilla cheese + crema

    wednesday:
    or with leftover salad, leftover fruit, and the frozen mac and cheese in the freezer?
    we'll see what needs to be used


    thursday:
    our wedding anniversary
    dinner date (or grab takeout)
    eat whole foods cake :)


    friday: fajita friday or leftovers or something from the freezer

    cheese (leftover goat cheese + leftover cheddar) + pimento cheese + chicken salad
    crackers + baguette
    caprese salad + leftover fruit
    leftover roasted asparagus and tomatoes or leftover veggies or leftover salad
