- homemade sub rolls, if time/energy allows ha
- make ahead twice baked potatoes (for monday's dinner + extras for freezer), if time/energy allows ha
- make thursday's dinner (I have something that day), all the way up until the baking step: cheesy broccoli quinoa casserole
- (I use rotisserie chicken, I use steamable frozen broccoli instead of that first step, and I use preshredded cheese which she advises not to - whoops)
- i cook quinoa in my beloved rice cooker on brown rice setting
I used my favorite 11 cup Pyrex dish for this (here's a set I have in blue) - prep kk's food, if needed

- make my creamy chicken noodle soup (some for lunch, some for the freezer - freeze in these containers)

monday:

tuesday:
- I usually make a double/triple batch of this recipe and freeze the leftovers, as these freeze SO WELL and i love having frozen taco meat in my freezer for a quick dinner
- see my favorite freezer containers here, but I love to freeze my taco meat in these containers
- use ground beef and/or ground turkey
- I give the onion a few minutes head start before adding in meat, and I add in riced cauliflower when sauteeing onion
- and/or sometimes I blend spinach into the tomato sauce (I don't measure how much spinach or cauliflower, sorry!) by literally throwing the tomato sauce and some spinach into a blender
- crunchy tacos + mashed avocado + pico + diced tomatoes + diced red onions + TJ's jalapeno sauce + shredded lettuce + quesadilla cheese + crema

wednesday:
snack dinner

- orrrr eat leftovers, depending on fridge situation + our mood

- snack dinner saturday
- finger foods, apps, cheese + crackers, various produce*, roasted veggies, dips, frozen chicken nuggets, anything goes - as long as it feels like a break from cooking
- *I'm a relatively picky eater, so I use this time to try produce I haven't necessarily liked before + experiment with different ways to cook/eat said produce - serving a new food alongside, say, cheese and crackers makes it less threatening to me
