11/1 menu plan

sunday: 
    • leftover soup + bread from my mom
    • apple pecan salad (use TJ's candied pecans, omit cranberries, use leftover vinaigrette in fridge)

monday: 
  • I usually make a double/triple batch of this recipe and freeze the leftovers, as these freeze SO WELL and i love having frozen taco meat in my freezer for a quick dinner 
  • see my favorite freezer containers here, but I love to freeze my taco meat in these containers
  • use ground beef and/or ground turkey 
  • I give the onion a few minutes head start before adding in meat, and I add in riced cauliflower when sauteeing onion 
  • puree spinach into tomato sauce (I don't measure how much spinach or cauliflower, sorry!)
  • crunchy tacos + mashed avocado + pico + diced tomatoes + diced red onions + TJ's jalapeno sauce + shredded lettuce + quesadilla cheese + crema

weekly meal prep:

  • shop my favorite meal prep goodies here
  • my version of Meal Prepping is asking myself, “What can I do now that will be helpful in the future?” AKA “What can I do now to make Thursday’s dinner easier?”

    • make a batch of this oatmeal 
      • store in small, individual glass containers like this for the week
    • cook italian hot sausage for wednesday, cut up veggies for salads/dinners
    • make a batch of soft scrambled eggs for the week
    • make snack boxes in divided glass containers like this

brett's favorite ham and cheese sliders
+ oven roasted sweet potato cubes (except I don't peel these and I roast these for muuuch longer - until caramelized and bits of crispy - probably like 45ish minutes)

wednesday:
instant pot creamy baked ziti (add italian sausage that I prepped on Sunday)
roasted broccoli or leftover salad?

thursday:
leftovers

friday:
fajita friday or f it friday
  • grab fajita family pack from chuy's 
  • orrrr eat leftovers, depending on fridge situation + our mood

    saturday:
    • snack dinner saturday

      • finger foods, apps, cheese + crackers, various produce*, dips, anything goes
        • I'm a relatively picky eater, so I use this time to try produce I haven't necessarily liked before + experiment with different ways to cook/eat said produce - serving a new food alongside, say, cheese and crackers makes it less threatening to me
      • peek at my "snack dinner" pinterest board where I find inspiration
      • aaaand this article in favor of snack dinner (+ ideas)
      • my favorite place to learn cheese plates is this instagram account or her book
      • if our budget allows, we love renewing our Cheese of the Month membership to celebrate our wedding anniversary - we discovered this cheese shop while dating in college, so it's one of our favorite nostalgic things. It’s pricey, but perfect for an at-home date, and perfect for our weekly snack dinner.
