how dinner happens these days: I wear KK in this carrier or I set her in our bouncer while I prep dinner (or, or! I do what I can during her naptimes), we set KK in the tripp trap high chair with the newborn insert while we eat, and we answer questions from this book (like we used to do when we were dating). And grocery delivery. Weekly grocery delivery.
See my Instagram stories for peeks at my daily life + this week's dinners.

lettuce + pico + crema + costco queso + mashed avo
- I use my favorite avocado tool when dealing with avocados
caesar salad + grilled chicken from sunday
garlic bread
thursday:
chicken spaghetti (from freezer in these containers)
- roasted broccoli: cut into tinyyyy pieces, coat in olive oil + garlic salt, 400 degree oven, upper rack, until crispy (clearly I wing this recipe, so you do you - somewhere around 20ish min, maybe? sometimes I add good parmesan at the end?)
- roasted brussel sprouts (I kinda wing this recipe, so take these directions with a huge grain of salt)
- i buy shredded brussel sprouts from HEB or Trader Joe's (or! or! I'll buy whole brussel sprouts, slice off the stem thingy, and cut the brussel sprout in half so that it falls apart deliciously in layers on the cookie sheet), I toss them in olive oil and generously sprinkle with garlic salt. I cook in an oven at 400 degrees (move the rack to the top third of the oven) and I cook until browned and crispy (like 20-30ish minutes? I DON'T KNOW). Then I drizzle them with TJ's Balsamic Glaze and put back in the oven for 2-3 minutes. thank you for coming to my ted talk.
leftover garlic bread
friday:
BLTs + leftover roasted sweet potatoes
lauryn wedding
saturday:
snack dinner saturday
- see my "snack dinner" highlight on my Instagram for my posts
- finger foods, apps, cheese + crackers, various produce*, dips, anything goes
- I'm a relatively picky eater, so I use this time to try produce I haven't necessarily liked before + experiment with different ways to cook/eat said produce - serving a new food alongside, say, cheese and crackers makes it less threatening to me
- peek at my "snack dinner" pinterest board where I find inspiration
- aaaand this article in favor of snack dinner (+ ideas)
- my favorite place to learn cheese plates is this instagram account or her book
- if our budget allows, we love renewing our Cheese of the Month membership to celebrate our wedding anniversary - we discovered this cheese shop while dating in college, so it's one of our favorite nostalgic things. It’s pricey, but perfect for an at-home date, and perfect for our weekly snack dinner.
