9/20 menu plan

 grocery budget is low, so we're trying to eat through our pantry/freezer + clean out leftovers. so I rearranged a few nights of the menu plan - aka we're not following the dinner themes some nights and THAT'S OKAY.

sunday: 
grill and chill  
  • brett grills burgers

      • my version of Meal Prepping is asking myself, “What can I do now that will be helpful in the future?” AKA “What can I do now to make Thursday’s dinner easier?”
    • visit my Pinterest boards to see where I save all food inspiration and ideas, like yogurt parfaits and snack boxes
      • make a batch of oatmeal and snack boxes for the week
      • snack boxes: oven omelette (or this recipe) + grapes + apples (+ could add leftover white cheddar, too)
        • for the oven omelette, I do shredded cheese and tater tots/hashbrowns as my add-ins. here's my instagram post on this. (or here's my post on similar egg cups.)

    monday: 
    meal prep monday
    creamy tomato parmesan soup (freeze leftovers - see favorite containers here)
    + grilled cheese (or BLTs? club sandwiches?)
    + bagged salad? leftover fruit?

    tuesday:
    taco-ish tuesday
    frozen taquitos + mashed avo + costco queso

    wednesday:
    slow cooker ravioli (use vodka sauce in pantry. and omit mozz cheese for personal preference)
    + roasted broccoli
    • roasted broccoli: coat in olive oil + garlic salt (or tj's onion salt), 400 degree oven, upper rack, until crispy (clearly I wing this recipe, so you do you)

      thursday:
      pizza night

              friday:
              fajita friday or f it friday
              • grab fajita family pack from chuy's 
              • orrrr eat leftovers, depending on fridge situation + our mood

                saturday:
                snack dinner saturday
                leftovers 
                or frozen fish sticks + tater tots + fruit :) :)
